28th & 29th May 2025
We welcomed 8 wonderful guests for a sun-soaked afternoon of elderflower foraging and cordial-making. The scent of those freshly picked blooms? Pure summer in a bottle!
But we didn’t stop there… 🍬

🌿 This Month’s Foraging: Elderflowers & Lilac Honey
Before a short getaway, I managed to squeeze in a quick Elderflower Cordial Workshop. With early blooms brought on by sunshine, it was the perfect foraging moment.
And the smell—floral, sweet, and full of early summer magic.
We also made Lilac Honey—an infusion of fresh lilac blossoms into local honey, perfect for scones or stirred into tea!

🍯 Elderflower Cordial Recipe
Makes approx. 1 litre
Ingredients:
900g granulated sugar
1.7L boiling water
3 unwaxed lemons
2 unwaxed oranges
30 elderflower heads
50g citric acid (optional)
Method:
Dissolve sugar in boiling water in a large pan.
Add juice of 1 lemon & 1 orange, plus slices of all remaining citrus.
Snip elderflowers into pan, stir in citric acid.
Cover and leave to infuse 24–48 hours.
Strain through muslin, bottle, and refrigerate.
Try it in sparkling water, drizzle over cakes, or mix into a sponge batter!
📚 Book Club Update
In May, our book club read A Boy Made of Blocks by Keith Stuart—sparking lively discussions and delicious food (homemade lasagne, summer salad, apple pie & cream!).
We now have two book clubs!
The Lovely Readers are reading Elizabeth is Missing by Emma Healey.
Our original group is diving into The List of Suspicious Things by Jennie Godfrey this June.

💍 Love Is in the Air – Wedding Season Begins
We’ve already hosted two magical weddings this month:
A rustic village hall celebration filled with fairy lights & bunting.
A boho-chic tipi wedding under the stars, full of natural wood and festoon lights.
A huge congratulations to our beautiful couples! Watching your day come together was a joy. Here’s to more love-filled summer celebrations!
